They always have been. Even in TOS, they had very specific likes and
dislikes. Things that they accepted and things that they rejected.
And, a nitpick, to be sure, but the whole "Infinite Diversity" thing
is non-canon anyway. The only place it's ever spelled out is in the
TAS Episode "The Infinite Vulcan". The IDIC is seen and referenced in
"Is There In Truth No Beauty?", but Spock never explicitly says what
the acronym means. Considering that Roddenberry just tossed it in
there to have another gewgaw for Lincoln Enterprises to sell, it
probably meant "Infinite Dollars and Infinite Cash".
Infinite Diversity is a contradiction in terms anyway (regardless of
whether you include or exclude the idea of limited diversitry, you no
longer have infinite diversity), so no race devoted to logic would
believe in it in the first place.
But Vulcan intolerance is a lot more blatant in the new movie, mainly
because the characters displaying these attitudes are not as likable
   as Spock.

I'm guessing, but considering that a major plot point in the movie is
the entire planet getting wiped out, I guess he didn't want us to feel
too bad about it afterwards. There are more "good riddances" than
   tears.
