      CHRS: CP437 2       MSGID: 1:18/200@fidonet 668a3490       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Black Bean Tortilla Casserole        Categories: Beans, Vegetables, Cheese, Breads, Sauces        Yield: 9 servings                2 lg Onions, chopped        1 1/2 c Chopped bell peppers        14 1/2 oz Can diced tomatoes, drained        3/4 c Picante sauce        2 cl Garlic; minced        2 ts Ground cumin        30 oz (2 cans) black beans; rinsed        - drained, divided        8 Corn tortillas (6")        2 c Shredded Mexican cheese        - blend              MMMMM--------------------------TOPPINGS-------------------------------        1 1/2 c Shredded lettuce        1 c Chopped fresh tomatoes        1/2 c Thin sliced green onions        1/2 c Sliced ripe olives                Set oven @ 350ºF/175ºC.                In a saucepan, combine the onions, peppers, tomatoes,        picante sauce, garlic and cumin. Bring to a boil. Reduce        the heat; simmer, uncovered, 10 minutes. Remove 1/2 cup        black beans. Stir remaining beans into the onion        mixture.                Spread a third of the mixture in a 13x9-in. baking dish        coated with cooking spray. Layer with 4 tortillas and        2/3 cup cheese. Repeat layers; top with reserved 1/2 cup        black beans.                Cover and bake for 30-35 minutes or until heated        through. Sprinkle with remaining 2/3 cup cheese. Let        stand until cheese is melted, about 5 minutes.
