      CHRS: CP437 2       MSGID: 1:18/200@fidonet 668906ed       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Greek Chicken Gyros        Categories: Poultry, Breads, Sauces        Yield: 7 Servings                2 lb Chicken tenderloins        1 1/2 tb Olive oil        1 tb Fresh squeezed lemon juice        3 cl Garlic; minced        2 ts Dried oregano        1 ts Dried thyme        1/2 ts Paprika        Salt & fresh ground pepper        6 (to 8) pita flatbreads        2 c Shredded romaine lettuce        2 c Cherry tomatoes; quartered        1 lg Red onion; thin sliced              MMMMM-----------------------TZATZIKI SAUCE----------------------------        3/4 c Greek yogurt        1/2 c Grated English cucumber;        - squeezed dry        2 tb Chopped fresh dill        2 tb Fresh squeezed lemon juice        2 ts Lemon zest        1 cl Garlic; minced        Salt & fresh ground pepper                To make the tzatziki sauce, combine Greek yogurt,        cucumber, dill, lemon juice, lemon zest and garlic;        season with salt and pepper, to taste. Set aside in the        refrigerator until ready to serve.                In a gallon size Ziploc bag, combine chicken, olive oil,        lemon juice, garlic, oregano, thyme, paprika, 1 teaspoon        salt and 1/2 teaspoon pepper. Marinate for at least 2        hours, turning the bag occasionally. Drain the chicken        from the marinade, discarding the marinade.                Heat grill to medium heat. Add chicken to grill, and        cook, turning occasionally, until chicken is completely        cooked through, about 8 minutes.                To serve, warm pitas on the grill, about 1-2 minutes per        side.
