         Title: Country Potato Pancakes

         2 lb (3 lg) potatoes; peeled   
         2 lg Eggs; lightly beaten   
         1 tb Grated onion   
         2 tb A-P flour   
         1 ts Salt   
       1/2 ts Baking powder   
              Oil for frying   
       
     Finely grate potatoes. Drain any liquid. Add eggs,   
     onion, flour, salt and baking powder. In a frying pan,   
     heat 1/8" oil over medium-high heat to 375oF/190oC.   
        
     Drop batter by heaping tablespoonfuls in hot oil.   
     Flatten into patties. Fry until golden brown, turning   
     once. Serve immediately.
