   In the first part of that first video, they use the cylinder cocks   
   (steam only exits there when the cylinders are cold and are usually shut   
   off after the locomotive is first moving) and a few other tricks to   
   create a massive curtain of steam out of which the locomotive exits.  I   
   think this type of photo got popular after a few such photos came from   
   railfans that had visited northern China in winter in the early to mid   
   1990s, when they still had steam in regular use.   
      
   I've seen a few of those photos in slide shows back when 35mm slides   
   were the primary medium of displaying this type of thing.  Very cold air   
   surrounding a very hot steam locomotive certainly created some   
   spectacular scenes.   
      
   However, trying to recreate the conditions of northern China on a very   
   cold day on a steam trip in South Africa requires a bit of artistic   
   efforts on the part of the crew.  It can get cold in Cape Town, but   
   further north is a different matter.
