Radioactive iodine is used to kill off the thyroid. It's absorbed by
the thyroid cells and kills them. I had it for Graves disease and now
have no thyroid function. Radiation treatment doesn't involve ingesting
radioactive iodine and the thyroid isn't any more susceptible to
passing radiation than any other cells. It's just that the radioactive
iodine is stored in them for long enough to kill them.

The iodine tablets are so that the thyroid stores that iodine and
doesn't need any more so doesn't absorb the radioactive iodine. Iodine
tablets shouldn't be taken 'just in case' though. Too much iodine can
   damage the thyroid as well.

Radioactive iodine can also stop the cells reproducing so that they do
not get replaced when they die off naturally. The cells have a life
expectancy of something like seven years so it can take that long to
see the full effects but it will be noticed long before then.
