   I've not sesen where organic mus mean "no GMO"; only if tyjhery say "no GMO"    
   asre they requiret9o have none, as far as I know.   
      
   Last I heard, it was illegal to label food as "contains no GMO" due to a   
   trade  agreement the two of our countries share.

   Yup, that's the one I've had some VERY tasty naan made from -- easy enough to    
   size them to sandwich size, if I want.   
      
   If I want the sponginess of wheat bread,I can buy some straight gluten to   
   dry,  grind, & mix into the chickpea flour.   
      
   Unless the bad DNA affects the gluten as badly as the rest of the wheat.   
      
   I think bran is unaffected, so hopefully the gluten is, too.
