      CHRS: CP437 2       MSGID: 1:18/200@fidonet 668d8b5f       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0500       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Nikki's Perfect Pastitsio        Categories: Pasta, Beef, Cheese, Vegetables, Sauces        Yield: 12 servings                2 1/2 c Uncooked penne pasta        2 tb Butter; melted        1 c Grated Parmesan cheese        1 1/2 lb Ground sirloin        1 md Onion; chopped        2 cl Garlic; minced        15 oz Can tomato sauce        1/2 ts (ea) salt & ground cinnamon        1 c Shredded Parmesan cheese;        - divided              MMMMM-----------------------BECHAMEL SAUCE----------------------------        1/2 c Butter; diced        2/3 c A-P flour        1/2 ts Salt        1/4 ts Pepper        4 c Milk        2 lg Eggs; beaten                Cook pasta according to package directions; drain. Toss        with butter; add grated Parmesan cheese. Transfer to a        greased 13" X 9" baking dish.                Set oven @ 350ºF/175ºC.                In a large skillet, cook beef and onion over medium heat        8-10 minutes or until beef is no longer pink, breaking        beef into crumbles; drain. Add garlic; cook 2 minutes        longer. Stir in tomato sauce, salt and cinnamon; heat        through. Spoon over pasta. Sprinkle with 1/2 cup        shredded Parmesan cheese.                In a large saucepan, melt butter. Stir in flour, salt        and pepper until smooth; gradually add milk. Bring to a        boil; cook and stir 1-2 minutes or until thickened.                In a small bowl, whisk a small amount of hot mixture        into eggs; return all to pan, whisking constantly. Bring        to a gentle boil; cook and stir 2 minutes. Pour over        beef mixture. Sprinkle with remaining cheese.                Bake, covered, 20 minutes.
