      TZUTC: -0500       MSGID: 38368.fido-homecook@1:3634/12 2bd5b730       PID: Synchronet 3.18a-Linux May 23 2020 GCC 7.5.0       TID: SBBSecho 3.11-Linux r3.173 May 23 2020 GCC 7.5.0       CHRS: ASCII 1       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Turkey Quesadillas w/Cranberry Salsa        Categories: Poultry, Fruits, Vegetables, Citrus, Breads        Yield: 4 servings                3/4 c Cranberries        2 tb Sugar        1/4 c Water        1 sm Pear; chopped        1/4 c Chopped red onion        1 Jalapeno pepper; seeded,        - chopped        3 tb Chopped celery        2 ts Grated lemon zest        1 tb Lemon juice        1/2 ts Ground cumin        4 Flour tortillas (6")        2 c Diced, cooked turkey        1 c Shredded white or yellow        - Cheddar cheese                For salsa, in a small saucepan, combine cranberries,        sugar and water; bring to a boil. Reduce heat to medium;        cook, uncovered, until berries pop, about 10 minutes,        stirring occasionally. Remove from heat; cool slightly.        Stir in pear, onion, jalapeno, celery, lemon zest and        juice, and cumin.                Preheat griddle over medium heat. Top one half of each        tortilla with 1/2 cup turkey; sprinkle with 1/4 cup        cheese. Fold tortilla to close.
