      TZUTC: -0500       MSGID: 37756.fido-homecook@1:3634/12 2b9f184f       PID: Synchronet 3.18a-Linux May 23 2020 GCC 7.5.0       TID: SBBSecho 3.11-Linux r3.173 May 23 2020 GCC 7.5.0       CHRS: UTF-8 4       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Sweet Potato Enchilada Stack        Categories: Potatoes, Beef, Beans, Chilies, Herbs        Yield: 6 servings                1 lg Sweet potato; peeled, cut in        - 1/2" cubes        1 tb Water        1 lb Ground beef        1 md Onion; chopped        15 oz Can black beans; rinsed,        - drained        10 oz Can enchilada sauce        2 ts Chilli spice mix        1/2 ts Dried oregano        1/2 ts Ground cumin        3 Flour tortillas; (8")        2 c Shredded Cheddar cheese                In a large microwave-safe bowl, combine sweet potato and        water. Cover and microwave on high for 4-5 minutes or        until potato is almost tender.                Meanwhile, in a large skillet, cook beef and onion over        medium heat until meat is no longer pink, breaking it        into crumbles; drain. Stir in the beans, enchilada        sauce, chilli spice, oregano, cumin and sweet potato;        heat through.                Place a flour tortilla in a greased 9" deep-dish pie        plate; layer with a third of the beef mixture and        cheese. Repeat layers twice.
