      CHRS: CP437 2       MSGID: 1:18/200@fidonet 668b7dc8       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0500       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Chocolate Potato Cake        Categories: Cakes, Desserts, Potatoes, Chocolate, Nuts        Yield: 12 servings                1 c Butter, softened        2 c Sugar        2 lg Eggs; room temp        1 c Cold mashed potatoes; (w/o        - added milk & butter)        1 ts Vanilla extract        2 c A-P flour        1/2 c Baking cocoa        1 ts Baking soda        1 c Milk        1 c Chopped walnuts or pecans              MMMMM-----------------------CARAMEL ICING----------------------------        1/2 c Butter; in cube        1 c (packed) brown sugar        1/4 c Evaporated milk        2 c Confectioners' sugar        1/2 ts Vanilla extract                In a large bowl, cream butter and sugar until light and        fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well        after each addition. Add potatoes and vanilla. Combine        the flour, cocoa and baking soda; gradually add to        creamed mixture alternately with milk, beating well        after each addition. Stir in nuts.                Pour into 2 greased and floured 9-in. round baking pans.        Bake @ 350ºF/175ºC until a toothpick inserted in the        center comes out clean, 25-30 minutes. Cool for 10        minutes before removing from pans to wire racks to cool        completely.                For icing, in a saucepan over low heat, cook butter and        brown sugar until butter is melted and mixture is        smooth. Stir in evaporated milk; bring to a boil,        stirring constantly. Remove from the heat; cool to room        temperature. Stir in confectioners' sugar and vanilla        until smooth.
