Dust the steaks on both sides with the        seasoned flour. Dip the floured steaks the buttermilk and        then back into the seasoned flour on both sides.                In a deep skillet, pour the oil to a depth of 1" and heat.        Fry the steaks in the hot oil until golden brown on both        sides.                TO MAKE THE COUNTRY GRAVY: In a cast-iron skillet, heat the        bacon drippings or margarine. Add the onion and saute until        the onions are soft. Whisk in the remaining 3/4 cup of        A-P flour, stirring until smooth to make a roux. Cook the        roux for 3 to 5 minutes. Do not allow the roux to brown.                Add the broth, whisking constantly. Whisk in the milk. Heat        the gravy over low heat until it thickens, stirring        constantly. Season with salt and pepper to taste.                Makes 4 servings.                Recipe from: Humble City Cafe, 200 East Main, Humble City,        Texas                Uncle Dirty Dave's Archives               MMMMM              ...
