         Title: Sweet Potatoes W/Marshmallows

         5 lb Sweet potatoes; peeled,   
              - cooked   
         4 lg Eggs; lightly beaten   
       1/2 c  Orange juice   
       1/2 c  Butter; softened   
       1/2 c  Sugar   
         1 ts Vanilla extract   
       1/2 ts Ground nutmeg   
           ds Salt   
         1 c  Miniature marshmallows   
       
     In a large bowl, mash sweet potatoes. Add eggs, orange   
     juice, butter, sugar, vanilla, nutmeg and salt; mix   
     well. Transfer to a greased 3 qt. baking dish.   
        
     Bake @ 350oF/175oC until set, 35-40 minutes. Top with   
     marshmallows; return to oven until they just begin to   
     puff and melt, 5-10 minutes.
