         Title: Apple Crumb Pie

     1 1/4 c  A-P flour   
       1/2 ts Salt   
       1/2 c  Shortening   
       1/4 c  Cold water

         5 lg Tart apples; peeled, thin   
              - sliced   
       2/3 c  Sugar   
         5 ts A-P flour   
     1 1/4 ts Ground cinnamon

       2/3 c  A-P flour   
       1/3 c  Sugar   
       1/3 c  (packed) brown sugar   
       1/4 c  Cold butter   
       
     In a large bowl, combine flour and salt; cut in   
     shortening until crumbly. Gradually add water, tossing   
     with a fork until dough forms a ball. Shape into a disk;   
     wrap and refrigerate 1 hour or overnight.   
        
     Set oven @ 450ºF/232ºC.   
        
     On a lightly floured surface, roll dough to a 1/8"-thick   
     circle; transfer to a 9" pie plate. Trim crust to 1/2"   
     beyond rim of plate; flute edge.   
        
     For filling, place apples in crust. Combine sugar, flour   
     and cinnamon; sprinkle over apples.   
        
     For topping, in a small bowl, combine flour and sugars;   
     cut in butter until crumbly. Sprinkle over filling. Bake   
     10 minutes. Reduce oven setting to 350ºF/175ºC; bake   
     until topping is golden brown and filling is bubbly,   
     50-60 minutes. Cool on a wire rack.
