      CHRS: CP437 2       MSGID: 1:18/200@fidonet 6688a46b       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Sue's Chocolate Zucchini Cake        Categories: Cakes, Desserts, Chocolate, Squash, Dairy        Yield: 15 servings                2 c A-P flour        2 c Sugar        1/2 c Dark baking cocoa        1 1/2 ts Ground cinnamon        1 ts Baking powder        1 ts Baking soda        1 ts Salt        2 lg Eggs; room temp        3/4 c Plain yogurt        1/4 c Oil        2 ts Vanilla extract        2 c Shredded zucchini              MMMMM--------------------------FROSTING-------------------------------        5 oz Can evaporated milk        1 c Sugar        1/4 ts Vanilla extract        4 oz Unsweetened chocolate;        - chopped        1/4 c Butter; in cubes                Set oven @ 350ºF/175ºC.                Grease a 13" X 9" baking pan.                In a large bowl, whisk the first seven ingredients. In        another bowl, whisk eggs, yogurt, oil and vanilla until        blended. Add to flour mixture; stir just until        moistened. Stir in zucchini.                Transfer batter to prepared pan. Bake 25-30 minutes or        until top springs back when lightly touched. Cool        completely in pan on a wire rack.                For frosting, place evaporated milk, sugar and vanilla        in a blender jar; cover and process 30 seconds.
