      CHRS: CP437 2       MSGID: 1:18/200@fidonet 66888c25       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Mackenzie River Meatloaf Cupcakes w/Mashed Potato Frostin        Categories: Beef, Breads, Vegetables, Potatoes        Yield: 12 Servings                2 lb Ground beef        1 c Panko        2 lg Eggs        1 ts Worcestershire sauce        1/2 md Onion; fine chopped        3/4 ts McCormick steak seasoning        3 c Garlic mashed potatoes        2 tb Chopped flat-leaf parsley        1/4 c Ketchup        12 Grape tomatoes                SPECIAL EQUIPMENT: Muffin tin                Set the oven @ 375ºF/190ºC.                Combine all the meatloaf ingredients in a large bowl. Use        a half-cup measure to scoop the meat into muffin tins        coated with cooking spray.                Bake for 20 minutes.                While the meatloaves are cooking, prepare your mashed        potatoes.                Transfer the mashed potatoes to a large resealable bag.        Snip off one corner of the bag.                To serve, place one meatloaf on a plate, then pipe the        mashed potatoes (about 1/4 cup) on top.                Sprinkle with parsley, drizzle with ketchup, and top each        with a grape tomato.                SERVES 12 - 1 meatloaf cupcake per person                Taken from The Mackenzie River Cookbook                RECIPE FROM: https://recipes.sparkpeople.com                Uncle Dirty Dave's Archives               MMMMM              ...
