      CHRS: CP437 2       MSGID: 1:18/200@fidonet 66888c24       PID: MBSE-BBS 1.1.0 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.0 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Gluten-Free Vanilla Cupcakes        Categories: Cakes, Snacks, Cheese        Yield: 24 servings                2/3 c Butter, softened        1 3/4 c Sugar        2 lg Eggs, room temperature        1 1/2 ts Vanilla extract        2 1/2 c Gluten-free A-P baking        - flour; w/o xanthan gum        2 1/2 ts Baking powder        1/2 ts Xanthan gum        1/2 ts Salt        1 1/4 c Milk              MMMMM--------------------------FROSTING-------------------------------        1/2 c Butter, softened        8 oz Cream cheese; softened        3 c Confectioners' sugar        2 ts Vanilla extract        1 To 2 tablespoons milk                Set oven @ 350ºF/175ºC.                Line 24 muffin cups with paper liners.                In a large bowl, cream butter and sugar until light and        fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well        after each addition. Beat in vanilla. In another bowl,        whisk flour, baking powder, xanthan gum and salt; add to        creamed mixture alternately with milk, beating well        after each addition.                Fill prepared cups three-fourths full. Bake 15-20        minutes or until a toothpick inserted in center comes        out clean. Cool in pans 10 minutes before removing to        wire racks to cool completely.                For frosting, in a large bowl, beat butter, cream        cheese, confectioners' sugar and vanilla until smooth.        Gradually beat in enough milk to achieve desired        consistency. Frost cupcakes.
