         Title: Laab Moo Isan (Thai Isan-Style Minced Pork Salad)   
    Categories: Pork, Citrus, Chilies, Rice, Vegetables   
         Yield: 4 servings   
       
         1 lb (450 g) coarse ground pork   
         2 tb Water   
         2 tb Fish sauce   
              Juice of 2 limes   
         2 ts Ground dried chilies   
         2 tb Khao khua (toasted-rice   
              - powder)   
              Fresh mint leaves   
              Chopped shallots or spring   
              - onions   
              Fresh Thai chilies; opt, for   
              - extra heat   
       
     In a saucepan, quickly simmer the ground pork with 2   
     tablespoons of water until just cooked through. We’re   
     aiming to avoid browning here.   
        
     Remove the saucepan from heat and stir in fish sauce,   
     lime juice, and ground dried chiles.   
        
     Optionally, add a small pinch of sugar for a hint of   
     sweetness.   
        
     Mix in the khao khua (toasted-rice powder) for a unique   
     texture and nutty aroma.   
        
     Allow the meat to cool slightly before adding a copious   
     amount of fresh mint leaves.   
        
     Add chopped shallots or spring onions for extra flavor.   
        
     If you like it spicy, toss in some fresh Thai chile   
     peppers.   
        
     Taste and adjust seasoning as needed-your mixture should   
     be tangy, salty, and slightly spicy.   
        
     Serve your Laab Moo Isan immediately with lime wedges.
