      TZUTC: -0500       MSGID: 69589.homecook@1:2320/105 2b202fea       PID: Synchronet 3.20a-Linux master/acc19483f Apr 26 202 GCC 12.2.0       TID: SBBSecho 3.20-Linux master/acc19483f Apr 26 2024 23:04 GCC 12.2.0       BBSID: CAPCITY2       CHRS: ASCII 1       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Leander Texas Beefy Sweet Potato Soup        Categories: Beef, Vegetables, Herbs, Chocolate        Yield: 4 Servings                1/4 c Olive oil; divided        2 lb Sirloin tip; in 1/2" dice        2 ts Kosher salt        1 ts Coarse ground pepper        2 c Fine chopped sweet onion        2 md Sweet potatoes; in 1"        - pieces        29 oz (2 cans) Italian stewed        - tomatoes; undrained        3 Fresh thyme sprigs        2 Fresh rosemary sprigs        32 oz Beef broth        4 c Fresh green beans; trimmed,        - in 2" pieces        10 oz Frozen corn        2 oz Bittersweet chocolate;        - chopped        3 tb Strong brewed coffee        Add'l salt & pepper; opt                In a Dutch oven or stockpot, heat 2 tablespoons oil over        medium-high heat. Season beef with salt and pepper;        brown in batches, adding oil as needed. Remove with a        slotted spoon. Add onion and sweet potatoes to pan.        Cook, stirring occasionally, until onion is translucent        and light golden brown.                Meanwhile, puree tomatoes and their juices in a blender        or food processor. Place thyme and rosemary on a double        thickness of cheesecloth. Gather corners of cloth to        enclose herbs; tie securely with string.                Return beef to pan; add herb bag, tomatoes and broth.        Bring to a boil. Reduce heat; simmer, covered, until        meat and potatoes are almost tender, about 20 minutes.        Add green beans. Cook until meat, potatoes and green        beans are tender, about 20 more minutes.                Add corn, chocolate and coffee, stirring until well        blended. Discard herb bag.
