Title: Basil's Balsamic Glazed Grilled Chicken
    Categories: Poultry, Herbs, Citrus
         Yield: 6 Servings

         6 Chicken breast halves
              +=OR=+
         6 lg Chicken thighs

   MMMMM---------------------------GLAZE--------------------------------
     1 1/2 c Balsamic vinegar
         3 pn Fresh rosemary; chopped
         3 pn Fresh thyme; chopped
              Salt & pepper
         2 ts White sugar
         1 Orange; zested

Clean chicken and pat it dry.

     Season with salt & pepper.

Heat grill to 275°F/135°C and grease it with oil.

FOR GLAZE: Place a saucepan on flame and combine vinegar,
thyme, rosemary, salt, pepper, orange zest, and sugar in
it. Bring it to a boil.

With strainer remove and discard the herbs floating on the
     top.

Stir constantly and let it simmer until thickened to reach
the consistency of honey. Remove pan from heat and allow
it to cool at room temperature.

Place chicken on indirect flame. Cover grill with lid and
cook for about 35 minutes or until done.

After 15 minutes of cooking turn the chicken. Cook for
another 10 minutes and then baste chicken with glaze on
     both sides. Continue cooking.

Put chicken on direct heat and cook until caramelized.
Remove chicken from grill and allow it to rest.
