    Hey, someone does actually read this echo. I'm not just shouting down   
    a well.   
      
   I must have "fat fingered" that one. It was supposed to go into "Cooking"   
   as part of my daily 10 recipe posts.

   Why not? I see it specified from time to time. For myslef I use lard,   
   suet, shortening, butter, schmaltz or a nice neutral flavour oil like   
   peanut of canola to cook with.

   I'm a Type II diabetic so have no experience along those lines. Right   
   now I am being controlled by diet and exercise. But, I still monitor   
   my sugar. Last time my docs took me off the meds I found that my fasting   
   sugars inched up and up and up. Been three months now and I'm holding to   
   90 - 105 for fasting (early morning) sticks.   
      
   This ain't burritos - but it is chciken:   
      
   MMMMM----   Recipe via Meal-Master (tm) v8.06   
      
         Title: Creamy Baked Chicken w/Artichokes & Mushrooms   
    Categories: Poultry, Herbs, Vegetables, Dairy   
         Yield: 6 servings   
      
         6    (4 oz) chicken breast halves   
              - boned, skinned   
     1 1/2 ts Paprika   
     1 1/2 ts Dried thyme   
       1/2 ts (ea) salt & black pepper   
        14 oz Can artichokes packed in   
              - water; drained   
         1 tb Butter   
         8 oz Sliced cremini mushrooms   
         2 tb A-P flour   
       3/4 c  Chicken broth   
       1/2 c  Fat-free Half & Half   
      
     Set oven @ 375?F/190?C.   
      
     Place chicken in 13X9-inch baking dish. Combine paprika,   
     thyme, salt, and pepper in small bowl; mix well. Reserve   
     1 teaspoon seasoning mixture; set aside. Sprinkle   
     remaining seasoning mixture evenly over chicken. Cut   
     artichokes in half; arrange around chicken.   
      
     Melt butter in large saucepan over medium heat. Add   
     mushrooms and reserved 1 teaspoon seasoning mixture;   
     cook and stir 5 minutes or until tender. Sprinkle flour   
     over mushrooms; cook and stir 1 minute. Stir in broth;   
     simmer 3 minutes or until thickened. Stir in   
     half-and-half; cook 1 minute. Pour evenly over chicken   
     and artichokes.   
      
     Bake 30 minutes or until no longer pink.   
      
     Makes: 6 servings   
      
     Calories: 220 calories, Carbohydrates: 14 g, Protein: 29   
     g, Fat: 6 g, Saturated Fat: 2 g, Cholesterol: 79 mg,   
     Sodium: 425 mg, Fiber: 7 g   
      
     Exchanges per serving: 2 Vegetable, 3 Meat.
