         Title: Spiced Pork & Apple Stew

         1 ts Canola oil   
     1 1/4 lb Lean diced pork stew meat   
         1 md Sweet onion; in 1/2" slices   
         2 cl Garlic; minced   
        28 oz Can crushed tomatoes   
         1 c  Chicken broth   
         2 tb Spicy brown mustard   
         1 tb Brown sugar   
         2 ts Ground cinnamon   
         1 ts Ground cumin   
       1/4 ts Salt   
         2 lg White potatoes; in 1"   
              - pieces   
     1 1/2 c  Baby carrots   
         2 sm Cooking apples; cored,   
              - diced   
         2 tb Chopped fresh Italian   
              - parsley; (opt)   
       
     Heat oil in nonstick Dutch oven over medium-high heat.   
     Brown pork in batches. Add onion and garlic. Reduce heat   
     to medium. Cover; cook 5 minutes, stirring occasionally.   
        
     Stir in tomatoes, broth, mustard, brown sugar, cinnamon,   
     cumin, and salt. Bring to a boil. Reduce heat to   
     medium-low; cover and simmer 30 minutes.   
        
     Stir in potatoes, carrots, and apples; simmer, covered,   
     45 minutes, or until pork and vegetables are tender.   
     Ladle into soup bowls. Sprinkle with parsley, if   
     desired.   
        
     Yield: 8 servings
