         1 c  Pecans (120 g)   
         1 c  Medjool dates (160 g);   
              - chopped   
         2 c  Carrots (220 g); shredded   
       1/2 ts Cinnamon (1.3 g)   
       1/2 ts Nutmeg (1.1 g)   
       1/4 ts Sea salt (1.4 g)   
         1 c  Shredded coconut flakes   
              - (80 g); divided   
       1/4 c  Raisins (40 g)   
       
     Preparation time: 10 minutes   
        
     These no bake carrot cake energy bites are cozy, warmly spiced, and   
     wholesome since they're made with nuts, carrots and dates for   
     sweetness!   
        
     Add the pecans, dates, shredded carrots, cinnamon, nutmeg, sea salt,   
     and half of the shredded coconut flakes to your food processor. Pulse   
     everything together until incorporated and the mixture begins to   
     turn into a dough, about 1 minute. Scrap down the sides if necessary.   
        
     Using a sheet of cling-film (Saran Wrap), shape the mixture into round   
     balls by wrapping and rolling until all the mixture is finished. If   
     you don't want to use cling-film, dampen your hands and use your wet   
     hands to roll the balls.   
        
     Roll the balls in the remaining shredded coconut flakes.   
        
     Place in the fridge for at least an hour to set properly, then enjoy!
