         3 sm Carrots   
         2    Celery ribs   
         4 lg Tomatoes; up to 5   
         2 ts Paprika   
         1 tb Ground coriander   
         1 ts Oregano   
         3 tb Oil; for sauteing   
         2 c  Cooked red kidney beans   
         1 c  Water or bean stock;   
              - up to 2 c   
         1 sm Can water chestnuts;   
              - with brine   
         1    Lemon; juice of   
         1 tb Honey   
         1 tb Corn starch; up to 2 tb,   
              - dissolved in water   
              Salt; to taste   
              Pepper; freshly milled,   
              - to taste   
      
     Chop the carrots, celery, and tomatoes and saute them with the herbs   
     and spices until nearly soft. Add a little water if necessary. Add   
     the beans and water chestnuts, with their liquids, and the lemon   
     juice and honey. Continue cooking until the vegetables are tender and   
     the flavors well-blended. Add corn starch, stirring constantly, until   
     the goulash thickens. Season with salt and pepper, and serve. This   
     goes well with grated cheese or a grain, and a green salad.
