         2 c  Cooked peas   
         2 tb Butter; melted   
         2    Eggs; well beaten   
       1/2 tb Salt   
       1/4 ts Pepper; or to taste   
         1 ds Cayenne   
       1/4 tb Onion; minced   
      
   MMMMM------------------------WHITE SAUCE-----------------------------   
         2 tb Flour   
       1/2 tb Salt   
              Pepper; to taste   
         1 tb Butter; up to 2 tb   
         1 c  Milk   
         1 tb Parsley; finely chopped -OR-   
       1/3 c  Cooked peas   
      
     White Sauce:   
      
     Melt butter, blend in flour and seasonings. Add parsley or peas. Add   
     milk gradually; stir and cook until thick.   
      
     Pea Timbales:   
      
     Pre-heat oven to 350?F. Press peas through a sieve--there should be   
     1 cup pulp. Add butter, eggs, and seasonings. Turn into buttered   
     moulds; cover. Oven poach or steam until firm, about 30 minutes. Turn   
     out; serve with 1 cup white sauce.
