         1 c  Fresh figs; sliced   
         1 tb Balsamic vinegar   
         1 tb Sugar free maple syrup   
         1    Blood orange; juice of

         1 c  GF flour   
       1/2 c  GF rolled oats   
       1/4 c  Soy milk   
       1/2 ts White wine vinegar   
       1/2 ts Baking soda   
       1/2 ts Baking powder   
       1/2 ts Salt   
         1 ts Vanilla extract   
       1/2 c  Earth Balance butter   
         1    Banana; mashed   
      
   MMMMM-----------------------CRUMB TOPPING----------------------------   
       1/2 c  GF flour   
       1/3 c  GF rolled oats   
       1/4 c  Earth Balance butter   
         1 tb Sugar free maple syrup   
      
     In a small pot over low heat, cook chopped strawberries and figs   
     together with vinegar, maple syrup, and orange juice, until the   
     filling is soft and thick. Set aside to cool.   
      
     For cake, add white wine vinegar to soy milk and set aside.   
      
     Add Earth Balance butter to large bowl, together with one mashed   
     banana and stir.   
      
     Add remaining ingredients for cake batter and stir.   
      
     Pour batter into square baking pan and spread evenly.   
      
     Pour strawberry fig balsamic filling over batter layer.   
      
     Mix together crumb ingredients with fork until you obtain a crumbly   
     texture. Sprinkle over the strawberry fig balsamic filling layer.   
      
     Bake in oven preheated to 350?F for approximately 18 to 22 minutes.   
      
     Let it cool completely before cutting up into bars and serving.
