         1 ts Oil   
         1 lb Ground beef   
         1 sm Onion; chopped   
         1 oz Env taco seasoning   
       110 oz Ro*Tel diced tomatoes &   
              - green chilies; undrained   
    15 1/2 oz Can pinto beans; rinsed,   
              - drained   
    15 1/4 oz Can whole kernel corn;   
              - drained   
     9 1/4 oz Bag corn chips   
         2 c  Shredded Mexican cheese   
              - blend   
      
   MMMMM--------------------------TOPPINGS-------------------------------   
              Sliced green onion   
              Sliced black olives   
              Pico de gallo   
              Sour cream   
              Chopped avocado   
              Guacamole   
              Sliced jalapenos   
       
     Set oven @ 350ºF/175ºC.   
        
     In a large skillet, heat oil over medium heat. Add   
     ground beef and onion; cook until beef is browned and   
     onions are tender, 6-7 minutes. Stir in seasoning mix   
     and diced tomatoes with green chiles. Bring to a simmer,   
     cook until thickened, 2-3 minutes, stirring constantly.   
     Stir in beans and corn.   
        
     Layer corn chips in greased 13 x 9 -in. baking dish.   
     Spoon taco meat evenly on top. Sprinkle with shredded   
     cheese. Bake until cheese is bubbly, 15-20 minutes.   
     Serve with toppings, as desired.
