         2 lb Fajitas   
         8    Flour tortillas   
         2 c  Monterey Jack cheese;   
              - shredded   
         1 tb Cooking oil   
         1    Onion; chopped   
         1    Tomato; chopped   
       1/2 c  Water   
         1    Celery rib; chopped   
         1    Bell pepper; chopped   
         2    Cilantro sprigs; chopped   
       1/2    Serrano; chopped   
       1/2 ts Oregano   
       1/2 ts Comino   
       1/2 ts Garlic powder   
       1/2 ts Salt   
      
     Prepare fajitas by cooking as desired, and chop finely. Have tortillas   
     ready--set both aside. Place onions, tomato, celery, bell pepper,   
     cilantro, and serrano in a skillet on medium heat and saute using 1   
     tb cooking oil. Add water and spices to taste, cook until mixture   
     comes to a boil--set aside. On an oven-proof serving dish place   
     tortilla flat on the bottom of the dish, sprinkle generously with   
     cheese--spread fajita meat on top of cheese. Cover with another   
     tortilla and top with more cheese. Place in oven at 350?F for about   
     5 minutes or until cheese is melted. Cover tortilla with prepared   
     salsa and serve.
