         Title: Cornbread Dressing

         Yield: 1 Batch   
      
     1 1/2 c  Corn meal   
       1/2 c  Flour   
         4 ts Baking powder   
         1 ts Salt   
     1 1/2 c  Buttermilk   
       1/2 ts Soda   
         1 ts Sugar (optional)   
       1/4 c  Fat; melted   
         2    Eggs; slightly beaten   
         2 md Onions; chopped   
     2 1/2 c  Celery; chopped   
         2 qt Bread crumbs; soft   
       1/4 c  Butter   
     1 1/2 ts Salt   
         1 ts Poulry seasoning   
         3    Eggs; up to 4   
              Chicken or turkey stock   
       1/2 ts Sage   
      
     Mix dry ingredients, stir milk into 2 slightly beaten eggs. Put fat   
     in pan, head oven to 400?F and add extra fat to liquid. Stir liquid   
     into dry ingredients. Add onions and celery and bake. Let bread cool,   
     crumble, and add bread crumbs, butter, 1-1/2 ts salt, 1 ts poultry   
     seasoning, 3 or 4 eggs, and enough turkey or chicken stock to   
     moisten. Bake at 325?F/163?C until brown.   
      
     Note:   
      
     I usually add 1/2 ts sage and quite a bit of stock, enough so that the   
     dressing is the consistency of a thick batter--a potato masher works   
     well to mix all of this together.
