         Title: Walnut & Ginger Flapjacks
    Categories: Grains, Nuts, Herbs, Breads
         Yield: 12 servings

       400 g (4 c) rolled oats
       200 g (1 c) golden syrup/light
              - corn syrup
       200 g (2 c) light brown soft
              - sugar
       200 g (12 tb/6 oz) butter
       100 g  (3/4 c) crystallised ginger;
              - chopped
       100 g (3/4 c) walnuts; chopped

Melt the butter in a medium to large saucepan with the
     golden syrup and sugar.

Once everything is melted and combined, like a caramel,
     take off the heat.

Stir in the oats, with the walnuts and ginger and give
     it a good mix together.

Lay the mixture out on a 6 inch by 8 inch baking sheet
     lined with greaseproof paper.

Flatten down with a spatula (if you rub it with oil
     first it will prevent stickiness).

Bake in an oven @ 170ºC/340ºF for 20-25 minutes, or
until it is golden around the edges.

Remove from the oven and immediately score out the
     portions with a knife.

Leave to cool completely before cutting through scored
     lines and dividing into servings.

Store in an air tight tin, box or biscuit tin.
