         Yield: 10 Servings

         1 lg Orange -OR-
1 1/2 sm Oranges (or medium)
       3/4 c Milk
         2 Eggs
2 c Whole wheat pastry flour
         1 ts Baking soda
       1/2 c Butter
       2/3 c Honey
         1 c Golden raisins
       1/2 c  Walnuts, almonds, or pecans;
              - chopped

My good friend Sheila passed on this recipe to me. The cake has a
distinctly orange taste to it that is produced from using the whole
     orange, skin and all.

Preheat oven to 350?F. Butter a 9 or 10" tube pan.

Squeeze orange and reserve juice. Put entire orange into blender
along with milk and eggs. Blend on high speed until finely chopped (2
     minutes).

Combine flour and baking soda in a small mixing bowl. In a separate
medium-sized bowl cream butter and honey. Add orange mixture to
honey-butter mixture. Then add flour, raisins, and nuts. Mix and pour
     into pan.

Bake 40 to 45 minutes, until top springs back. Sprinkle reserved
juice over hot cake and leav in pan until almost cool. Remove from
pan and allow to finish cooling.
