         Title: Quick Lentil Wafer Rolls

         2 md Potatoes;   
              - boiled, peeled, mashed   
         1 sm Jalapeno; chopped   
       1/2 ts Salt   
         1 md Onion; finely chopped   
         1 ts Cumin seed   
         1 ts Fresh ginger; minced   
         1 tb All-purpose flour or   
              - whole wheat flour   
         1 c  Water; +1 tb   
              Ghee; for frying   
         4    Plain papads   
              - (lentil wafers)   
       
     Combine potatoes, chile, onion, ginger, salt, and cumin seed. Mix   
     thoroughly. Divide into 8 portions. Make a paste with flour and 1 tb   
     water. Meanwhile heat ghee in fryer. Dip papads, one at a time in 1   
     cup water for a few seconds, until softened. Do not insert in water   
     too long; it will become difficult to work with. Cut papad in half   
     with a knife to make two semi-circles. Place one portion of potato   
     mixture on one end of semi-circle. Overlap the other end to make a   
     triangle. Seal all sides with paste made with flour. Deep fry in ghee   
     until light brown. Drain on paper towel. Repeat with remaining   
     papads. Serve hot with mint sauce or tomato chutney.
