         Title: Fox's Almond Cake

       3/4 c  Granulated sugar   
         3    Eggs or substitute   
         2 tb Lemon juice   
         1 c  Olive or coconut oil   
         1 c  Almond, soy, rice, or   
              - oat milk   
         2 ts Vanilla extract   
         1 c  All-purpose flour   
         1 c  Almond flour   
         2 ts Baking powder   
         1 ts Salt   
              Strawberries; sliced   
              - (optional)   
       
     Preheat oven to 375?F. Grease a 9? round cake pan or a bundt pan   
     with a bit of oil. Beat sugar and eggs until light and frothy, about   
     2 minutes. Add the oil and beat to combine. Add the lemon juice,   
     milk, and vanilla and beat to combine. Slowly add the flours, baking   
     powder, and salt, mixing until just combined. Do not overmix! Pour   
     batter into prepared pan and tap on the counter to settle any air   
     bubbles. Bake for about 45 minutes or until a toothpick inserted near   
     the center comes out clean. Let the cake cool in its pan for about 10   
     minutes before running a spatula or rubber knife around the edge to   
     loosen and turn it out. Add sliced strawberries to top for decoration   
     (optional).
