         Title: Three Bean Chili

         1 tb Olive oil -OR-   
       1/4 c  Water   
         1 lg Sweet onion; chopped   
       1/2 sm Green bell pepper;   
              - seeded & chopped   
         2 cl Garlic; minced   
         1 sm Fresh hot chile;   
              - seeded & minced   
              - (optional)   
         3 tb Tomato paste   
         2 tb Chili powder   
        28 oz Can crushed tomatoes   
     1 1/2 c  Cooked black beans -OR-   
        15 oz Can beans; rinsed & drained   
     1 1/2 c  Cooked pinto beans -OR-   
        15 oz Can beans; rinsed & drained   
     1 1/2 c  Cooked dark red kidney   
              - beans -OR-   
        15 oz Can beans; rinsed & drained   
     1 1/2 c  Water   
         1 ts Salt   
       1/4 ts Black pepper; freshly ground   
       
     Heat olive oil or water in a large saucepan over medium heat. Add the   
     onion and bell pepper, cover, and cook, stirring occasionally, until   
     tender, about 10 minutes. Add the garlic and chile (if using) and   
     cook for 1 minute. Stir in the tomato paste, chili powder, and   
     tomatoes until well blended. Add all of the beans, the water, salt,   
     and pepper, and simmer, stirring occasionally, until the liquid is   
     reduced and the flavors are blended, about 45 minutes. Taste and   
     adjust the seasonings, then serve hot.
