After 45 minutes,        squeeze out liquid from potatoes and add salt, pepper, and chickpea        flour. Mix and set aside. If there is still too much liquid in the        bowl, add a little more flour.                In a frying pan, heat 1/2 tb oil and saute the onions. Add carrots        and saute for another 5 minutes. Add tomatoes, cilantro leaves, and        garam masala. Stir well. Remove from heat and set aside.                In a heavy skillet, heat 1 tb oil and coat entire interior of skillet.        Divide potato mixture into 4 parts. Take 1 portion and spread it        evenly over the bottom of skillet. Cover and cook over low heat,        until the potatoes are cooked and hold together. Flip the "omlette"        over and cook until the bottom turns a golden brown. Flip again and        cover half the omlette with a quarter of the filling; top with some        of the grated paneer. Fold omlette in half. Press down and continue        heating for a minute more. Transfer omlette to a plate and serve        immediately.
