         Title: Black Bean Croquettes With Yellow Pepper Coulis

     1 1/2 c  Cooked black beans -OR-   
        15 oz Can beans; rinsed & drained   
       1/2 c  Old-fashioned rolled oats   
       1/4 c  Walnuts or sunflower seeds   
       1/4 c  Onion; grated   
       1/4 c  Carrot; grated   
         2 tb Fresh parsley; minced   
         1 ts Salt   
       1/2 ts Black pepper; ground   
         1 c  Dry bread crumbs;   
              - for dredging   
              Olive oil; for sauteing   
         1 c  Yellow Pepper Coulis   
       
     You can change the character of these versatile croquettes by varying   
     the herbs or spices or by accompanying them with a different sauce.   
        
     Combine the beans, oats, walnuts, onion, carrots, parsley, salt, and   
     pepper in a food processor and process until well blended. Divide the   
     mixture into 4 equal mounds and shape into round patties. Coat each   
     evenly with the bread crumbs and set on a baking sheet. Refrigerate   
     for 30 minutes.   
        
     Heat a thin layer of olive oil in a large skillet over medium heat.   
     Cook the croquettes until golden brown all over, about 8 minutes   
     total. Drain on paper towels and serve hot surrounded by the coulis.
