Divide the        mixture into 4 equal mounds and shape into round patties. Coat each        evenly with the bread crumbs and set on a baking sheet. Refrigerate        for 30 minutes.                Heat a thin layer of olive oil in a large skillet over medium heat.        Cook the croquettes until golden brown all over, about 8 minutes        total.
