         Title: Meatloaf   
    Categories: Beef, Pork, Chilies, Casseroles   
         Yield: 8 Servings   
       
     1 1/2 lb Ground beef   
       1/2 lb Ground pork   
       1/2 lb Ground lamb (opt)   
         1 lg Onion, chopped fine   
         1 lg Bell pepper; diced 1/8"   
         2 cl Garlic clove; minced   
       1/2 c  Beef stock   
         3 lg Eggs   
         3 tb Oil   
         1 tb Chopped parsley   
         1 ts Cayenne   
       1/2 ts Thyme   
           pn Nutmeg   
              Salt & pepper   
              Oil for pan   
      
   MMMMM--------------------------GARNISH-------------------------------   
         1 c  Tomato sauce   
              +=OR=+   
         1 c  Ketchup   
              +=OR=+   
         1 c  Pre-made Italian red gravy   
       
     Combine meat, onion, garlic, herbs & spices. Transfer to   
     a bowl. Add rest of ingredients and mix to combine.   
        
     Oil a loaf pan and place mixture. Bake in a 450ºF/232ºC   
     oven for 15 min. Turn down heat, and pour garnish over   
     top of meatloaf (if using) continue baking @ 325ºF/163ºC   
     for another 35 min.
