         Title: Country Spam Casserole

         Yield: 6 Servings   
      
         1 cn Spam luncheon meat - (12   
              -oz); cubed   
         1    Onion; chopped   
         1    Bag frozen mixed vegetables   
              -- (16 oz); thawed, drained   
         2 cn Cream of potato soup -; (10   
              -3/4 oz ea)   
         3 c  Prepared instant mashed   
              -potatoes   
         1 pk Chives and onion cream   
              -cheese - (3 oz); softened   
       1/4 c  Grated Parmesan cheese   
      
     Heat oven to 400 degrees. In skillet over medium-high heat, saute   
     Spam and onion until browned. In bowl, combine vegetables, Spam   
     mixture, and soup. Spoon into 3-quart casserole dish. In bowl,   
     combine mashed potatoes and cream cheese. Spread over Spam mixture.   
     Sprinkle with Parmesan cheese. Bake 25 to 30 minutes or until hot and   
     bubbly. This recipe yields 6 servings.   
      
     Per serving: 22 Calories (kcal); 1g Total Fat; (41% calories from   
     fat); 2g Protein; 2g Carbohydrate; 3mg Cholesterol; 63mg Sodium Food
