         4 lg Potatoes   
       1/2 ts Turmeric   
       1/2    Serrano; chopped   
         1 ts Coriander powder   
         1 ts Cumin powder   
       1/2 ts Black mustard seeds   
         1 tb Jaggery   
         4 c  Water   
         1 tb Coconut; grated   
         1 ts Salt   
         2 tb Oil   
       
     Cook whole potatoes with water in a pressure cooker for 5 minutes   
     after bringing to maximum pressure. Set cooking water aside. When   
     cool, remove lid; peel & cube potatoes. In a separate pan, heat oil   
     and cook mustard seeds until they sputter. Add potatoes, coriander,   
     turmeric, and cumin and stir-fry for 30 seconds. Stir in 2 cups of   
     reserve potato water, salt, and serrano. Simmer for 3 minutes, add   
     jaggery, and garnish with coconut.
