3 c Kale (180 g);
- de-stemmed, washed, torn
1 Apple; sliced thinly
2 tb Cranberries (20 g)
2 tb Pecans (15 g)
3 tb Vegan tofu feta; crumbled
MMMMM------------------------VINAIGRETTE-----------------------------
2 tb Maple syrup or agave nectar
- (30 ml)
1 tb Apple cider vinegar (15 ml)
2 tb Olive oil (30 ml)
1/2 ts Salt (3 g)
1/2 ts Black pepper (1 g); ground
Preparation time: 15 minutes
This vegan Apple, Pecan and Feta Salad is loaded with fall flavour!
Sweet and crunchy, with a peppery maple vinaigrette to bring it
together.
Salad:
In a bowl, place the kale. Add the apples, cranberries, pecans and
feta cheese on top--if you'd like, toss them in a bowl first them
sprinkle on top.
Maple-Apple Vinaigrette Dressing:
Whisk the ingredients together and pour over the salad. Enjoy!
