         Title: Zucchini Niocoise

         Yield: 4 Servings   
       
       3/4 c  Olive oil   
       1/4 c  Wine vinegar   
       1/4 ts Salt   
       1/8 ts Pepper; coarsely ground   
         4    Potatoes;   
              - boiled, peeled, sliced   
       1/2 lb Green beans   
     1 1/2 lb Zucchini; sliced   
              Leaf lettuce   
     6 1/2 oz Can tuna   
         2 md Onions; sliced   
         2    Tomatoes; quartered   
         2    Eggs; hard-boiled   
       
     Make a salad dressing by combining oil, vinegar, and seasonings. Boil   
     potatoes until done, but not mushy. Place slices in shallow bowl and   
     marinate in some of the dressing. Chill. Cut beans into 2" pieces and   
     boil in salted water for 15 minutes until tender crisp. Drain,   
     marinate, and chill. Slice zucchini into very thin slices. Marinate   
     and chill. Slice, marinate, and chill onions. Line a salad bowl or   
     serving dish with fresh, crisp lettuce leaves. If tuna is to be   
     included, center it in serving dish, surrounding it with mounds of   
     marinated vegetables. Garnish with tomato and egg slices. Flavors are   
     enhanced by preparing marinated vegetables several days in advance.
