         Title: Mexican Pita Pizzas

         Yield: 24 Servings   
       
         4    Pita breads   
        15 oz Can black beans; drained   
    11 1/2 oz Jar Pico de Gallo; drained   
         1 c  Cheddar cheese; shredded   
         1 c  Monterey Jack cheese;   
              - shredded   
         2 c  Lettuce; shredded   
      
   MMMMM---------------------GARNISHES/TOPPINGS--------------------------   
              Salsa   
              Guacamole   
              Scallions; sliced   
              Black olives; sliced   
       
     Heat oven to 375ºF/190ºC Place pita breads on a large   
     baking sheet. In a medium bowl, combine beans and Pico   
     de Gallo. Spoon over pita breads.   
        
     Sprinkle each bread with cheeses.   
        
     Bake 14 to 18 minutes or until heated through & cheese   
     is melted. Top with shredded lettuce.   
        
     Cut each into 6 wedges. Serve with salsa, sour cream,   
     guacamole, scallions and/or olives.
