         Title: Zucchini Bacon Casserole

         Yield: 2 Servings   
       
     2 1/2 c  Zucchini; thinly sliced   
       1/2 c  Sour cream   
         1    Egg yolk; slightly beaten   
         1 tb Flour   
         1    Egg white; stiffly beaten   
         1 c  Cheddar cheese; shredded   
         3 sl Bacon; crumbled   
       1/3 c  Bread crumbs; tossed with:   
         1 tb Margarine; melted   
       
     Cook zucchini in small amount of boiling salted water for about 5   
     minutes. Mix together next 3 ingredients and fold in egg white. Layer   
     in 1 qt casserole dish half the squash, egg mixture, cheese, and   
     bacon. Repeat. Top with bread crumbs. Bake in preheated 350?F oven   
     for 20 minutes.
