         Title: Zucchini Au Gratin

         Yield: 6 Servings   
       
         2 md Zucchini   
         2 tb Margarine   
       1/4 c  Dry bread crumbs   
       1/2 cn Condensed cream of mushroom   
              - soup   
       1/3 c  Cheddar or American cheese;   
              - shredded   
         1 tb Onion; minced   
              Salt & pepper   
       
     Cut zucchini lengthwise into slices 1/4" thick. Melt 1 tb margarine   
     in a skillet; stir in bread drumbs; toass and set aside. Melt   
     remaining margarine and saute sliced squash for 3 to 5 minutes. Add   
     remaining ingredients to skillet and heat until cheese is melted.   
     Serve topped with crumbs.

         Title: Fruit Pulau   
    Categories: Indian, Pilafs   
         Yield: 4 Servings   
       
         2 c  Rice   
     3 1/2 c  Coconut milk   
         1 c  Cherries, pineapple chunks,   
              - or seedless grapes   
         1    Onion; sliced   
         1 pn Mace   
         1 ts Nutmeg; chopped   
       1/2 ts Salt   
         2 tb Ghee   
              Sweet chutney   
       
     Cook rice in coconut milk and se4t aside. Heat ghee in a pan and   
     saute onion. Remove from heat and blend in mace and nutmeg. Then add   
     rice and fruits and mix well. Serve with sweet chutney and arrange   
     fresh cherries or pineapple rings around edges of the dish.
