      CHRS: CP437 2       MSGID: 1:320/219@fidonet 57051fc9       PID: MBSE-BBS 1.1.2 (Linux-x86_64)       TZUTC: -0400       TID: MBSE-FIDO 1.1.2 (Linux-x86_64)       MMMMM----- Recipe via Meal-Master (tm) v8.06                Title: Lobster Pot Pie - Andrew Gruel        Categories: Pastry, Seafood, Vegetables, Wine, Dairy        Yield: 5 Servings                1 lg (12"x12") sheet puff pastry              MMMMM--------------------------FILLING-------------------------------        1 1/4 lb Live lobster; cook for 8 min        - then remove the meat        +=OR=+        8 oz Lobster meat; pre-cooked        1/4 c Chopped yellow onion        1 c Carrots; diced 1/2"        1/4 c Diced celery        1 tb Minced garlic        1 c Frozen green peas        1 c Potatoes; diced 1/2" (par        - cooked in microwave or        - steamed)        1 c White wine        16 oz Clam juice        1 c Heavy whipping cream        1 ts Chopped fresh thyme        1/4 c Cornstarch        +=MIXED WITH=+        1/4 c Water        3 tb Nutritional yeast        1 lg Egg; beaten for egg washing        - the crust                TOOLS: large (12") cast iron skillet                In a large sauté pan, heat 1 tablespoon of oil over        medium-high heat                Add onions and carrots and sauté until soft and        translucent (about 5 minutes)                Add celery and sauté for another 2 minutes                Add garlic and sauté until golden brown (about 45        seconds)                Deglaze with white wine and reduce 3/4                Add peas, par-cooked potatoes, and the clam juice.        Simmer for about 5 minutes.                Add heavy whipping cream and reduce for 2 minutes, add        fresh thyme                Drizzle in corn starch slurry while cream is simmering.        Cook for another 2 minutes at a light simmer. Season        with nutritional yeast.                Fold in par-cooked lobster.                Add filling into skillet, top with puff pastry pieces        (cut a few small holes in the pastry), and brush with        egg wash.                Bake @ 400ºF/205ºC for 15-20 minutes or until the        crust is golden brown.                Yield: Feeds 4-6                RECIPE FROM: https://www.hallmarkchannel.com                Uncle Dirty Dave's Archives               MMMMM              ...
