      MMMMM----- Recipe via Meal-Master (tm) v8.06               Title: Quick Red Beans & Rice        Categories: Cajun, Rice, Pork, Beans, Chilies        Yield: 6 Servings               1 tb Olive oil        1 lb Fully cooked smoked sausage;        - in 1" coins        1 lg Onion; chopped        1 lg Green bell pepper; seeded,        - chopped        4 cl Garlic; minced        2 tb Tomato paste        1 tb All-purpose flour        2 ts Cajun spice blend        2 Bay leaves        1/4 ts Dried red pepper flakes        1/8 ts Ground allspice        1 c Water        1 c Beef broth        32 oz (2 cans) dark red kidney        - beans; rinsed, drained        Salt and pepper        6 c Cooked white rice               From Robin Davis, former Chronicle staff writer.               Heat the oil in a large heavy saucepan. Add the sausage;        saute until browned. Using a slotted spoon, transfer the        sausage to paper towels to drain.               Add the onion, bell pepper and garlic to the same saucepan        and saute until tender, but not browned. Add the tomato        paste, flour, Cajun spice, bay leaves, pepper flakes and        allspice; stir for 2 minutes. Gradually stir in the water        and broth. Simmer until thickened, stirring often.               Add the beans, return the sausage to the pan and simmer        for 15 minutes to blend flavors. Season with salt and        pepper.
