FRUIT COCKTAIL CAKE (with cake mix)       1 box white or yellow cake mix       1 can fruit cocktail              Follow directions on box. When it is ready to pour in 9x13 inch pan to bake,       drain a can of fruit cocktail and just stir the fruit in the cake batter and       bake as usual. Cool and top with cool whip.              Carol T       --              >From HB:              This was always popular at family reunions back in Wisconsin over 50 years       ago. I think it originated back in that area of the midwest.              Old Fashioned Fruit Cocktail Cake       Ingredients        1 egg        1 cup sugar        1 tsp baking soda        1/2 tsp salt        1 1/4 cup flour        1 tsp vanilla        1 can (2 cups) fruit cocktail (I use the light stuff, canned in juice)        1/2 cup brown sugar (optional)        1/2 cup walnuts (optional)              Instructions        Beat sugar, egg and dry ingredients.        Add vanilla.        Fold in can of fruit, juice and all.        Spread in a greased 9 X 9 pan.        If desired ( and you can handle more sugar!), combine brown sugar and        nuts and sprinkle over cake batter.        Bake 325 degrees for 60 minutes.       --              >From Dee S:       FRUIT COCKTAIL CAKE 350 degrees 35-40 MIN                     Blend together in 9x13 pan:       1 cup sugar       1 cup flour       1 egg       1 tsp soda       1/4 tsp salt       1 cup fruit cocktail              Top with brown sugar & nuts              SAUCE FOR FRUIT COCKTAIL CAKE       Blend and bring to a boil:       1/2 cup sweetened condensed milk       3/4 cup sugar       1/3 cup butter       Pinch of salt              Add a dash of vanilla and spoon over cake       --       --------------------------              --- BBBS/Li6 v4.10 Dada-2        * Origin: Prism bbs (1:261/38)    |
