When I was growing up in       the midwest, without air-conditioning, there were many hot nights that my       mother would make a cold soup for dinner. She didn't have one particular soup       that she made. Mostly, I think she'd go out into the garden and see what was       ripe, or what herbs needed picking, and just throw them together and make a       delicious soup. I'm not as creative as she was so that's why I thought I'd       ask if there were some good cold soups that I could make for my husband and       kids on a hot summer night. Thanks, Sue V."              Hi Phil, Maybe Sue, who was looking for a cold soup recipe, could use this       one. I've been making this cucumber soup in the summertime for so long now,       that I don't even remember where I got the recipe from. I serve it cold in       the summer and hot in the winter. I grow cucumbers in my garden, so it's a       good way for me to use those extra cukes up and my family loves the soup year       round. Sally L.              Ingredients       2 cucumbers (chopped)       2 tablespoons thinly sliced green onion 2 tablespoons margarine       1 tablespoon red wine vinegar       4 cups chicken broth       1 tablespoon farina       salt to taste       1/8 tablespoon dried dill       1/2 cup sour cream       3 tablespoons chopped fresh parsley              Directions: Peel, seed, and chop 2 cucumbers. Chop the green onions and cook       in the margarine until soft. Add the chopped cucumbers and the red wine       vinegar. Pour in the broth, and stir in the farina. you can add salt,       depending upon your taste. Then add dill. Let the soup simmer for about 20       minutes, or until the cucumbers are soft. Put the soup into a blender, and       puree it. Pour the puree into a bowl, and whisk in the sour cream. Taste the       soup for seasoning. Fill each bowl with soup and garnish with cucumber slices       and chopped parsley.       ------------              10. A vintage recipe request from a reader: "I've lived in California for my       whole life and I think we have always had lemon trees nearby. Thinking back       to my childhood, I know that my mom would make us fresh squeezed lemonade and       a bunch of other lemony dishes but I'm not too great in the kitchen and I have       a hard time coming up with ideas. I do go on the internet looking for recipes       but I thought I'd ask your readers for ideas since I now have a lemon tree       growing right outside my door and I end up with so many lemons that I don't       know what to do with them all! I don't care the recipes are for an appetizer,       main dish, dessert or a drink, I'll take any! Thanks so much!
