   8. A Vintage Recipe

   Last week Trish R. requested a fruit salad recipe from the 70s. We had SO many   
   responses!  Thanks to Cheryl, Grace S, Dee, Elnore R, Merlene H, Donna S, Lana   
   R, Sandi C, Carol T, Ginny B, Kay E, Lara H, Susan N and Barbara M!  Many were   
   duplicates, so this must have been THE fruit salad for potluck dinners in the   
   70s!  Here are a few, and   
   we hope one of these is what Trish remembers!   
      
   ==   
   2 small cans mandarin oranges   
   1 cup coconut   
   1 cup miniature marshmallows   
   1 carton sour cream   
   1/2 cup chopped pecans   
      
   Can also add the following if you like: 1 cup diced pineapple or cut up bananas

   The salad was called "Ambrosia" . It did have shredded coconut, pineapple,   
   marshmallows, mandarin orange segments, maraschino cherries and was bound   
   together by sour cream.  Delicious!   
   ==   
      
   1 can pineapple chunks (20oz.)   
   1 can mandarin oranges, drained(20 oz.) 1 banana sliced   
   1 c seedless grapes   
   1/2 cu small marshmallows   
   1 cup vanilla lowfat yogurt   
   1/4 cup coconut toasted   
      
   combine all fruit, stir in yogurt, then sprinkle with coconut

   This was a staple at every family reunion I went to in the 70's.  The fruit   
   can be changed to taste and I have seen it made with various nuts as well.  Do   
   an internet search for Ambrosia Salad and you will get a wide array of   
   recipes.  This recipe came from Cooks.com. Enjoy!  Lara H.   
      
   AMBROSIA SALAD   
   2 cans pineapple chunks, drained   
   2 cans mandarin oranges, drained   
   2 jars maraschino cherries, drained 1 can coconut flakes   
   1/2 bag mini marshmallows   
   4 oz. sour cream   
   16 oz. Cool Whip   
   Combine sour cream and Cool Whip. Fold in all other ingredients. Chill covered   
   for at least 2 hours.

   Delicious Fruit Salad   
   1-6oz container of frozen lemonade prepared according to directions   
     on can   
   1 T plain gelatin   
   1- 3oz pkg vanilla pudding (not instant) Soften gelatin in 1/4 cup lemonade   
   add 1-3/4 cup lemonade - stir in pkg of pudding Cook and stir until mixture   
   comes to a full boil and is thick Chill   
   Fold the following into above chilled mixture 1 c  cool whip   
   1- 8.75 oz crushed pineapple drained (save 1 c juice for topping) 1/2 c   
   maraschino cherries cut in half 1-11oz can mandarin oranges drained 1 c mini   
   marshmallows   
   Turn into large mold. Chill until firm   
      
   Topping   
   Mix together 2 T flour   
   1/2 c sugar   
   1 beaten egg   
   1 c pineapple juice   
   1 T butter   
   Cook until thick CÇô cool   
   Fold in 1-1/2 c cool whip   
   Spread mixture on top of salad   
   Chill
