      Molasses Cookies       375F about 11-12 minutes Makes about 50 to 60 cookies.       The trick of having soft cookies is to make a test cookie to make sure enough       flour has been added. Also, when removed from the cookie sheet to a rack I       always cover them with a tea towel so they don't dry out.       1 c. sugar       1 cup margarine or butter (butter makes a richer cookie but is        trickier to handle)       1 egg       1 cup molasses       1/2 c. water       1 teaspoon baking soda       1 teas. salt       1 slightly heaping teas. ginger       4-5 c. flour       ************************       Beat butter and sugar until light and fluffy. Beat in egg. Mix molasses and       water in a large cup as soda tends to make it foam up. Stir in soda. Add salt       and ginger to flour, stirring well. Fold into butter mixture alternating       molasses mixture with flour mixture, beginning and ending with flour. Roll       and cut at least 1/4 inch thick, or make drop cookies. Bake at 375F about 11       to 12 minutes. Bake a drop test cookie to make sure enough flour has been       added.              I want to add that Penzey's online also has a wonderful Gingersnap cookie. As       they say, left out, the cookies are chewy.
